Link in bio.⠀ INGREDIENTS:⠀ 1 small yellow onion, diced⠀ 2 cloves garlic, minced⠀ 1 pound ground beef⠀ 1 teaspoon salt⠀ 1 teaspoon freshly ground black pepper⠀ 1 teaspoon paprika⠀ 1/4 teaspoon cayenne⠀ 2 cups elbow macaroni⠀ 1 1/2 cups heavy cream⠀ 1 1/2 cups beef broth⠀ 1 cup tomato sauce⠀ 2 cups shredded cheddar cheese⠀ 1 cup chopped parsley⠀ ⠀ STEPS:⠀ Heat a large skillet over medium-high heat. Add onions and garlic and cook until fragrant. Add ground beef and cook until brown. Add salt, pepper, paprika, and cayenne and stir to combine.⠀ Add macaroni, cream, broth and tomato sauce and bring to a boil. Cook until pasta is tender, approximately 8 minutes, then reduce to a simmer. Add cheese and mix until melted. Link in bio.⠀ INGREDIENTS:⠀ 2 tablespoons butter⠀ 1/2 yellow onion, minced⠀ 3 cloves garlic, minced⠀ 1 jalapeño, minced⠀ 1 (12-ounce) jar marinated quartered artichokes, well drained and chopped⠀ 1 (10-ounce) box frozen spinach, squeezed dry⠀ 1 (8-ounce) block cream cheese, room temperature⠀ 1/4 cup sour cream⠀ 1 1/2 cups Mexican cheese blend⠀ 1/2 cup pico de gallo⠀ 12 corn tortillas⠀ Kosher salt and freshly ground black pepper⠀ 1 large egg, beaten⠀ 1 cup vegetable oil⠀ ⠀ TO GARNISH:⠀ Mexican crema⠀ Chopped cilantro⠀ Sliced avocado⠀ ⠀ STEPS:⠀ In a large saute pan over medium-high heat, melt butter. Cook the onion, jalapeño and garlic until softened, about 4 minutes. Add artichokes and cook until lightly browned, about 2 more minutes. Season with salt and pepper. Remove to a large bowl. Cool slightly. Stir in the spinach, cream cheese, sour cream, cheese and pico de gallo. Season with salt and pepper.⠀ Wrap corn tortillas in a clean, damp tea towel and set on a plate. Microwave 6 at a time until pliable, 2 minutes.⠀ Brush the top edges of tortillas with egg wash. Add about 3 tablespoons of filling across the lower half of each tortilla and roll tightly. Place seam side down on a sheet tray, and repeat with remaining tortillas.⠀ Heat oil in large, high-sided skillet over medium-high heat. Working in batches, place taquitos seam side down in the hot oil, and fry until golden brown, about 4 minutes. Link in bio.⠀ INGREDIENTS:⠀ 2 tablespoons milk⠀ 1 cup powdered sugar⠀ 1 teaspoon vanilla⠀ 1 teaspoon vanilla bean paste⠀ ⠀ PRETZELS:⠀ 3 1/2 cups warm water, divided⠀ 2 tablespoons sugar⠀ 1 package active dry yeast⠀ 1/2 cup butter, melted⠀ 1 1/2 teaspoons salt⠀ 5 cups all-purpose flour⠀ 2 teaspoons baking soda⠀ 2 cups chocolate chip cookie dough⠀ 1 large egg, beaten⠀ 2 tablespoons pretzel salt⠀ ⠀ STEPS:⠀ Make the glaze - In a medium bowl, combine milk, powdered sugar, vanilla and vanilla bean. Mix until smooth, runny, and easily pourable for covering the pretzels. Set aside.⠀ Make the pretzels - In the bowl of a stand mixer fitted with the dough hook attachment, add 1 1/2 cups warm water, sugar, yeast and melted butter, and mix until combined. Let sit for 4 minutes until foamy.⠀ Add flour and salt, and knead until dough is smooth and doesn’t stick to the sides of the bowl. Remove from the bowl and form into a ball. Place in an oiled bowl and cover with plastic wrap. Let rise until dough has doubled in size, approximately 1 hour.⠀ Form and bake the pretzels - Preheat oven to 425 degrees. Line two baking sheets with silicone baking mats.⠀ In a medium bowl, mix remaining warm water with baking soda. Set aside.⠀ Divide proofed dough into 8 pieces. Divide cookie dough into 8 even pieces and roll out into logs. Refrigerate until needed.⠀ Roll each pretzel piece into a rectangle, approximately 12 by 3 inches. Place a piece of cookie dough in the center of each pretzel rectangle. Roll pretzel dough over cookie dough to cover completely. Pinch seams to seal and form into a pretzel shape. Dip into baking soda and water mixture, and place on baking sheet.⠀ Brush the tops of each pretzel with beaten egg. Bake for 15 to 20 minutes until golden. Place on a cooling rack over a baking sheet. Pour vanilla glaze over pretzels and top with salt. Serve once set. Strain to get every last drop of vodka! Prepare cocktail glasses by moistening rim with lemon wedges. Dip in crushed graham crackers to coat rim evenly. In a cocktail shaker, mix infused vodka, lemon juice and brown sugar. Fill with ice and shake vigorously for 12-15 seconds until chilled. Strain into chilled coupe glasses and garnish with floating apple chips. BRIE PUFF PASTRY BITES: 1 sheet of puff pastry, thawed in refrigerator overnight Melted mutter for brushing 1 tablespoon picked fresh thyme 1/2 cup cranberry sauce 4 ounces brie, rind removed and flesh cut into 1-inch squares 1/2 cup honey 1 tablespoon coarse black pepper 1/4 cup unsalted butter, softened 1/2 cup toasted and roughly chopped walnuts Orange zest for garnish (optional) STEPS: Preheat oven to 400°F, and prepare a baking sheet with parchment paper. Unroll puff pastry onto a floured work surface and cut into 5 columns by 5 rows to form 2 squares. Using the bottom of a shot glass or spice jar, gently make circle indentations in the middle. Pierce the middle of the circle with a fork to keep from puffing. Place on baking sheet and bake for 5-7 minutes until golden brown. Remove from oven and poke again with the end of the shot glass to create a cup. Fill each 'cup' with 1 teaspoon of cranberry sauce, top with brie square, a bit more sauce, sprinkle with fresh thyme and bake until cheese is melty about 5-7 minutes. Prepare black pepper honey by stirring together honey, black pepper, butter and toasted walnuts. Drizzle on warm bites as soon as they come out of the oven. Enjoy warm with orange zest.

Link in bio.⠀ INGREDIENTS:⠀ 1 tablespoon canola oil, plus 6 cups for frying⠀ 1 large onion, diced⠀ 1 green bell pepper, seeded and diced⠀ 1 pound rib-eye steak, thinly sliced⠀ 1 teaspoon kosher salt⠀ Pinch freshly ground black pepper⠀ 1/4 cup mayonnaise⠀ 1 cup shredded provolone cheese, divided⠀ 4 flour tortillas⠀ 4 slices provolone cheese⠀ ⠀ STEPS:⠀ In a large skillet, add 1 tablespoon oil and cook onions and peppers until soft. Add steak, salt, and pepper, and cook through. Transfer to a large bowl and stir in mayonnaise and 1/2 cup shredded provolone.⠀ On a flat surface, lay out one flour tortilla. Add a slice of provolone cheese and about 1/2 cup of the cheesesteak filling. Wrap tightly and secure with toothpicks.⠀ Heat the remaining canola oil to 350 degrees. Link in bio.⠀ INGREDIENTS:⠀ 130g all-purpose flour⠀ 60g powdered sugar, preferably organic⠀ 1/4 teaspoon salt⠀ 1 tablespoon freshly grated lemon zest⠀ 115g cold unsalted butter, cut into 1/4-inch dice⠀ ⠀ CHEESECAKE:⠀ 500g cream cheese (room temperature)⠀ ½ cup powdered sugar⠀ 1 tsp vanilla extract⠀ 1 tsp lemon essence⠀ ¼ cup frozen raspberries⠀ 1 cup milk powder⠀ 2 drops pink food gel⠀ Lemon zest⠀ Lemon curd⠀ ⠀ STEPS:⠀ Adjust oven rack to middle position, preheat oven to 350°F, and line an 8- by 8- by 2-inch anodized-aluminium baking pan with a piece of parchment paper long enough to overhang the pan's edges. Combine flour, powdered sugar, salt, lemon zest, and butter in the bowl of a food processor; pulse to form a dry but pebbly meal, about twelve 1-second pulses. Scatter into the prepared baking pan, press into an even layer, and bake until pale gold and firm, about 30 minutes. Set aside to cool.⠀ To make cheesecake add cream cheese, powdered sugar and vanilla extract to a large mixing bowl. Mix in a stand mixer or use a hand mixer to get fluffy and smooth. Link in bio.⠀ INGREDIENTS:⠀ 1 cup sugar⠀ 1/4 cup cold water⠀ 1/2 cup heavy cream⠀ 2 tablespoons unsalted butter⠀ 1 teaspoon salt⠀ ⠀ FRITTERS:⠀ 3 large Granny Smith apples, peeled, cored and sliced into 1/2-inch pieces⠀ 2 tablespoons lemon juice⠀ 1 teaspoon vanilla⠀ 3 tablespoons sugar, divided⠀ 1 1/2 teaspoons cinnamon, divided⠀ 1 cup all-purpose flour⠀ 2 teaspoons baking powder⠀ 1 teaspoon baking soda⠀ 1 teaspoon salt⠀ 2 large eggs⠀ 1/3 cup buttermilk⠀ 1/2 cup cinnamon sugar⠀ 4 cups canola oil⠀ ⠀ STEPS:⠀ For the salted caramel - In a medium saucepan, combine sugar and cold water. Cook on medium-high heat without stirring until the sugar has become golden, approximately 8 minutes. Remove from heat and carefully stir in heavy cream, being cautious of splattering sugar. Stir in butter and salt. Reserve two tablespoons for fritter dough, and set the rest aside.⠀ For the fritters - In a medium bowl, combine prepared apple pieces with lemon juice, vanilla, 1 tablespoon of sugar and 1/2 teaspoon cinnamon. Set aside.⠀ In a large bowl, combine flour, baking powder, baking soda, remaining cinnamon, salt and remaining sugar. Stir in eggs, buttermilk and two tablespoons of the salted caramel. The dough will look lumpy. Add apple mixture and stir to combine.⠀ In a medium pot, heat oil to 365 degrees. Drop 1/2 cup of fritter dough into the oil and fry until golden on all sides, approximately 3 minutes. Remove from the oil and place on a baking sheet covered with a cooling rack. Repeat this process to use all the dough. Sprinkle fritters with cinnamon sugar and let them cool slightly. Top with salted caramel. Serve immediately!⠀ #saltedcaramel #flour #dough #lemonjuice

Link in bio.⠀ INGREDIENTS:⠀ 1 cup water⠀ ½ cup unsalted butter, cold and cut into cubes⠀ 1 tsp sugar⠀ ½ tsp salt⠀ 1 cup all-purpose flour⠀ ¼ cup cocoa powder⠀ 4 large eggs⠀ ⠀ PASTRY CREAM: ⠀ ½ cup sugar⠀ ¼ cup cornstarch⠀ pinch salt⠀ ½ tbsp. instant coffee powder⠀ 1 tbsp cocoa powder⠀ 2 cups milk⠀ 4 large egg yolks⠀ 2 tbsp unsalted butter, cold⠀ 1 ½ tsp vanilla extract⠀ ⠀ CHOCOLATE TOPPING:⠀ 4 oz semisweet chocolate, chopped⠀ ½ cup heavy cream, hot⠀ ⠀ STEPS:⠀ Make the Cream Puffs - In a large pot, combine the water, butter, sugar and salt. Set to high heat and bring to a boil. Stir in the flour with a wooden spoon mix until a film forms on the bottom of the pan. Transfer the dough to a bowl and cool for 3-4 minutes. Add the eggs one at a time, stirring vigorously and completely incorporating each egg after each addition. Transfer the dough to a piping bag fitted with a large, round piping tip and pipe 1 ½-inch rounds onto baking sheets lined with parchment paper. Wet your fingers and smooth any pointed peaks. Bake them at 375F for 30 minutes. Cool on the pan for 10 minutes, then transfer to a wire rack and cool completely.⠀ Make the Pastry Cream - Combine the sugar, cornstarch, and salt in a pot. Add the milk, egg yolks and whisk together. Set to medium heat and whisk constantly until it comes to a boil. Once it thickens, remove from the heat and add the vanilla extract and butter. Strain through a sieve and cover with plastic wrap, pressing it directly on the surface. Refrigerate until chilled. If the pastry cream becomes lumpy, pulse in a food processor a couple times. Transfer to a piping bag fitted with a round tip. Slice the cream puffs in half. Pipe a generous dollop of cream between the two layers.⠀ Make the glaze - Pour the cream over the chocolate and whisk until smooth. Link in bio.⠀ INGREDIENTS:⠀ 8 ounces wide egg noodles⠀ 1/2 stick butter, melted⠀ 1 16-ounce container cottage cheese⠀ 2 cups sour cream⠀ 1/2 cup sugar⠀ 6 large eggs, lightly beaten⠀ 1 teaspoon cinnamon⠀ ⠀ SANDWICH:⠀ 2 slices turkey bacon⠀ 1 egg⠀ 1 leaf butter lettuce⠀ 1 slice American cheese⠀ Mayonnaise⠀ Hot sauce⠀ Salt and pepper⠀ ⠀ STEPS:⠀ Preheat oven to 375 degrees. Grease an 8x8-inch baking dish with butter.⠀ Cook noodles according to package.⠀ In a large mixing bowl, combine the butter, cottage cheese, sour cream, sugar, eggs and cinnamon. Add cooked noodles and combine. Pour all ingredients into prepared baking dish, and bake for 40 to 50 minutes. Remove from oven and allow to cool. Refrigerate overnight.⠀ Remove kugel from refrigerator and cut one square, about the size of a bread slice. Next, slice horizontally through the kugel to create two thinner pieces.⠀ Place a cast-iron skillet on the stove. Lay both kugel slices in the skillet and brown both sides of each slice. Remove kugel slices from skillet and set aside.⠀ Cook the turkey bacon in the hot skillet, then remove. While the skillet is still hot, crack the egg and cook sunny-side up.⠀ Spread desired amount of mayonnaise on kugel slices, followed by bacon, lettuce, cheese and egg. Link in bio.⠀ INGREDIENTS:⠀ 2 tablespoons olive oil⠀ 1 small yellow onion, diced⠀ 1 red bell pepper, diced⠀ 3 cloves garlic, minced⠀ 1 pound chorizo⠀ 1, 15-ounce can kidney beans⠀ 1, 15-ounce can pinto beans⠀ 1, 15-ounce can diced tomatoes⠀ 2 cups chicken stock⠀ 1/2 teaspoon salt⠀ 1 teaspoon pepper⠀ 1/2 teaspoon cayenne⠀ 1 teaspoon smoked paprika⠀ 1 cup sour cream⠀ 1/2 cup chopped chives⠀ 2 tablespoons picked cilantro, for garnish⠀ ⠀ CORNBREAD:⠀ 2 cups cornmeal, medium grind⠀ 1/2 cup all-purpose flour⠀ 1 1/2 teaspoons baking powder⠀ 1 teaspoon salt⠀ 1/4 cup sugar⠀ 2 large eggs⠀ 1 1/4 cups milk⠀ ⠀ STEPS:⠀ Make the chili - In a large Dutch oven, heat oil on medium heat and saute onions until translucent. Add garlic and cook until fragrant. Add bell pepper and saute until golden. Add chorizo and cook through. Turn heat to medium-low and add beans, tomatoes and chicken stock. Stir in spices, and let chili rest while you make the cornbread.⠀ Make the cornbread - Preheat the oven to 350 degrees.⠀ In a large bowl, combine cornmeal, flour, baking powder, salt and sugar. Add eggs and milk and stir into dry mixture until combined. Using a 1/4 cup measure, scoop cornbread mix all over the top of the prepared chili.⠀ Bake the cornbread - topped chili until golden, approximately 25 minutes. The chili will continue to cook and deepen in flavor as the cornbread bakes. Serve warm, topped with sour cream, chives, and cilantro. Store leftovers in the fridge for up to 3 days.
