One week till Christmas, so hard to believe! Putting my self in a happy calm mindset, while the world around me speeds by🐰💖
Made some fresh homemade cinnamon nut granola this morning. Topped my @foragerproject
❄️blueberry yogurt with ❄️granola ❄️pomegranate seeds!! Granola is so easy to make! To Make your own. Preheat your oven to 350 degrees. Prep a large baking pan with parchment paper.
Combine and stir together:
❄️ 4 cups old fashioned rolled oats ❄️1/2 cup uncooked quinoa ❄️1 tsp salt ❄️1 1/2 teaspoons cinnamon
❄️1/2 teaspoon cardamom ❄️1/2 cup crushed walnuts ❄️1/4 cup pumpkin seeds ❄️1/4 cup cocoa nibs
Second bowl combine:
❄️1/2 cup maple syrup
❄️1/2 cup melted coconut oil
❄️2 tsp vanilla extract
Pour liquid into dry ingredients and coat completely. Pour on parchment paper and cook for 19mins. Optional: When cool add 1/2 cup dried cranberries or other fruit 😃🐰💖
