スーパーフードはいつものメニューに少し加えるだけでいいんですよっ、とジェイミー・オリヴァーがよく言ってるけど、そう思います。 栄養あるならどばどば入れたほうがいいじゃない、って思うかもしれないけど、そうなると食事の楽しみが減ってしまうというか、目的が変わってしまうというか。 食べ物から栄養を摂るという目的はもちろんなんだけど、食事は誰かと、みんなとおしゃべりしながら楽しむのがやっぱりいい。旬の食材の旨さを堪能したいし、手間をかけた家庭料理はすごく贅沢で。心の健康にも関わるもの。 レジーナ・スペクターの曲を聴きながら、久しぶりに作ったチキンのトマト煮込みを食べていたら、しみじみしちゃいました(笑)。 音楽も大事ね。 ・ 栄養バランスと食感もよく、お肉も柔らかくて味もすごく優しく仕上がった今日の煮込みを覚書きとして。 ・ 🗒[チキンのトマト煮込み] ①鍋にオリーブオイル大さじ1を熱して、潰したにんにくとローレルを炒める。 ②皮なしの鶏もも肉2枚をそれぞれ1/4の大きさに切り、塩コショウをして①の鍋に入れて焼く。焼き色がついてきたら、くし切りに した玉ねぎ1個と、乱切りにしたエリンギを加えて焼く。 ③玉ねぎとエリンギがしんなりしてきたら、トマトのホール缶1缶を入れてトマトを粗く潰し、空になったトマト缶半分の水と、固形コンソメスープ1個を入れる。さらにスペルト小麦のファッロを大さじ4入れて、フタをして15分煮込む。 ④フタを取り、ローレルを取り除き、水煮のレッドキニビーンズとガルバンゾ(ひよこ豆)、あらかじめ一口大に切って蒸しておいたブロッコリー1/2株を加えて、レッドマカ小さじ2とゴジベリー大さじ1も加え、塩コショウで味を整えては5分煮込んでできあがり。 ・ #superfoods #redmaca #maca #farro #beans #gojiberry #chickensoup #スーパーフード #レッドマカ #マカ #ファッロ #レッドキニビーンズ #ガルバンゾ #ひよこ豆 #ゴジベリー #チキンのトマト煮込み
