Strawberry season has begun!! I literally go crazy buying strawberry punnets to make the most of this short time every year! I then slice them up and put them in the freezer, it's a great way to enjoy them for a little longer 🍓🍓🍓 I made these little guilt-free treats for a recent workshop I held to demonstrate healthy, simple, low cost and nutritious snack options. I found having good quality snacks to go for made a big difference when improving my nutrition. It saved me from consuming unnecessary calories because I knew exactly what was in them, and now it's a part of my weekly routine 💁🏼 Ingredients:
3/4 cup desiccated coconut
1/2 cup rolled oats
3/4 cup fresh strawberries, hulled
1/2 cup raw almonds
4 medjool dates, soaked in boiling water for 10 minutes
1/4 cup almond butter
Optional: 1-2 Tbsp freeze dried strawberry powder
Extra desiccated coconut for rolling.
After soaking dates drain them and add to a food processor along with the rest of the ingredients. Process until smooth. Using a dsp teaspoon measure scoop out the mixture and roll into balls. Cleaning and slightly wetting your hands in between helps. Roll bliss balls in remaining desiccated coconut and place on a baking tray lined with baking paper. Freeze for 1-2 hours before eating. Store in the fridge.
