I always make too much rice when a curry's on. This rice porridge is a great way to use leftover rice!
Just heat the rice and some dairy free milk of your choice (I used coconut today) on the hob, then add whatever you want! I added banana, cacao nibs, grated ginger, some cinnamon, goji berries, a few raisins, and some chia seeds.
Go wild! It's super warming and filling for keeping you warm and cosy all day now it's getting chilly. 😊❄ Also extra happiness for me cos it reminds me of the polenta porridge I was eating in the mountains of Tasmania around this time last year, with the most lovely couple and some other beautiful humans. Collectively we were helping to build an earthship, which is like a super smart super Eco home, that regulates it's own heat, is a greenhouse, is totally off grid, and amazing in so many ways. All made out of cob - mud, water, sand and straw. I miss Australia 💕
