Smells SO good! Apple Stuffed Honey Mustard Pork Roast ๐ŸŽ๐Ÿฏ๐Ÿ– I saw a Crockpot recipe floating around Facebook for this with a pork loin. I thought the flavors sounded delicious, but i thought it would be mushy and over cooked in a crockpot. So, this is my version. Roasted in the oven, with a sirloin roast and Sierra Nevada Stout and Stoneground Mustard... 2-2 1/2 lb pork sirloin roast 1 1/2 lb creamer potatoes, parboiled 10 minutes 4 sm carrots, peeled 1 medium apple, peeled and sliced 1/4 in thick 2 Tbsp olive oil, divided 1/2 tsp Herbs de Province 1/2 tsp garlic powder 2 Tbsp Sierra Nevada Stout and Stoneground Mustard. 3 Tbsp honey Salt and pepper to taste Preheat oven to 400 degrees. Spray a 9x11 baking dish with non stick spray. Place potatoes and carrots in the baking dish and sprinkle with Herbs and garlic powder. Drizzle with 1 Tbsp of olive oil and toss to coat. Set aside. Cut slits in the pork Roast about 1/2 inch deep and 1/2 inch apart. Place apple slices in the slits. If needed to keep together, you can secure the ends with toothpicks. Place in the center of the baking dish and arrange the potatoes and carrots around the outside. In a small bowl, mix mustard and honey. Spoon 1/2 the mixture over the Roast only. Drizzle with the other Tbsp of olive oil. Sprinkle with salt and pepper. Bake uncovered, basting a couple times, for about 1 1/2 hours or until pork is done (145-160 degrees). Spoon the other half of the honey mustard over the top. Let rest 10 minutes, then serve. Easy weekday meal of steamed brown rice, sweet peppers, and baked tofu. I garnished with cilantro and sesame seeds. Uncomplicated nutrition and a great balance of low fat plant protein and healthy carbs๐Ÿ’ช๐Ÿผ๐Ÿ’š๐ŸŒฟ This makes a great lunch the next day as well! I pressed my tofu and got all of the excess water out, cubed it, and then seasoned it really well with my favorite spices. I topped it teriyaki sauce and baked at 375 F for about 40 minutes. Oat & Chia bowl w/ stew rhubarb and apple โ˜€๏ธ๐Ÿ˜๐Ÿฅ„ Super simple: make your favourite oats (I used my vanilla oats recipe in previous post), surround it in chia pudding (recipe also in previous post) and top with warm stewed rhubarb and apple, and fresh fruit!!! Quick stewed rhubarb and Apple: add 1/2 - 1 cup of sliced fruit to pan with a splash of water, dash of cinnamon and salt and maple syrup to taste. Stir around and put lid on to soften. As a Natural Foods Chef, I am not an advocate of the microwave. I've never owned one in my adult life, and definitely haven't used one in over 15 years. A cookbook advocating using a microwave makes me feel like this ๐Ÿ˜ฑ. But at least I can see the humor in this. My dad just gifted me this cookbook and I got a good laugh reading it. While I was out for my run this yummy Asian veggie soup was cooking up in my #instantpot ๐Ÿƒ๐Ÿปโ€โ™€๏ธ๐Ÿฒ. I used #veggie broth instead of chicken broth and added more veggies instead of using vermicelli to make it #vegetarian and #paleo friendly for #meatlessmonday ! We added snap pea pods, crimini mushrooms and water chestnuts, and boy was it good!! This week's lunch: slow cooked roast with brown rice and quinoa! Recipe: place eye of round in slow cooker, add one small can tomato sauce, add water until meat is covered, season with about 1/3 cup chili powder, chopped onions, minced garlic, garlic powder (as much as you like), cayenne (the more the spicier, but stick to a few tablespoons, you can always add more after it's cooked), about 2 teaspoons of salt. Stir, cover and cook on low for about 12 hours or high for 6-8. Cooking time will vary based on the size of the roast. The longer it cooks the more easily it will break apart. You can also stuff the roast with garlic and onion if you're up for it! I put this over quinoa and brown rice from Seeds of Change. It's an easy microwaveable bag! #recipes #healthyfood #macros based on 3/4 cup quinoa and brown rice and 5 oz steak: 398 calories, 31.3 g carbs, 14.8 g fat, 34 g protein

My favourite summer pasta, Walnut Pesto Tagliatelle ๐Ÿคค I always make a big batch to eat later for a secret midnight snack ssssshh ๐Ÿค Serves 4 Ingredients: Pesto; 1/2 cup chopped walnuts 5 cloves garlic 2/3 cup chopped Italian parsley 1 lemon Avocado or high quality olive oil Salt/Pepper 1 package of tagliatelle. . Directions: Put on a large pot of water to boil, salty like the ocean. While it boils mince the garlic, chop the parsley and walnuts. Tip 1. Crush the walnuts with the side of you blade first, then use a rocking motion with the blade to make chopping a breeze. Tip 2. Avoid over chopping the parsley or you'll lose all the yummy flavours to the cutting board. Tear then give a very quick chop. Zest, then juice the whole lemon. Put everything in a large mixing bowl and set aside. Your water is probably boiling now so add the pasta and cook ~8 minutes or to package directions. Once cooked strain and add the the mixing bowl. Add a generous about of oil and mix. Season with taste and pepper to taste. Taadaa you're done! Super easy and delicious ๐Ÿ˜‹

Java Jo Seasoning makes a really tasty roast beef! This marinade combined olive oil, garlic, Worcestershire sauce, mustard and a touch of orange juice with Java Jo. Marinate for 4 hours to overnight. Bake at 500ยฐ for 15 minutes, turn the oven off and let the roast sit in the oven with the door closed for 15-17 minutes per pound for medium rare to medium. Pull it out of the oven and let the roast rest for 10-15 minutes, then slice and serve. We got three meals out of this roast beef: sliced over salad, shaved for cheese steak sandwiches and the rest was julienned for steak fajitas. #Repost @soyummy ใƒปใƒปใƒป Mini chicken and waffle sliders for the win ๐Ÿ† ๐Ÿ”— INGREDIENTS - Pillsbury grandโ€™s flaky layer biscuits - 1/2 (3 pound) whole chicken, cut into pieces - Salt and ground black pepper to taste - 2 cups buttermilk - 1 tablespoon hot pepper sauce - Cayenne pepper - 1-1/2 cups all-purpose flour - 1 teaspoon garlic powder - 1/2 teaspoon paprika - 3 Eggs - Vegetable oil DIRECTIONS To prepare chicken bites: Sprinkle the chicken pieces with salt and pepper, hot pepper sauce, 1 teaspoon of cayenne pepper in a bowl. Pour buttermilk over mixture and mix with tongs. Refrigerate for about 2 hours to marinate. Remove the chicken pieces from the buttermilk mixture, and shake off excess. Discard the remaining buttermilk mixture. Place the flour, 1 tablespoon of cayenne pepper, garlic powder, paprika, and salt and pepper to taste and whisk. Coat battered chicken with flour mixture then egg wash then coat once again with flour (repeat as desired) Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Gently place chicken pieces into the hot oil, and fry until chicken is cooked through and golden brown, 8-10 minutes (breasts and wings) or 13 to 15 minutes (thighs and drumsticks). Drain the fried chicken on paper towels. For Waffle: Cut Pillsbury dough in to quarters and place in waffle iron cook for up to 5 minutes. *Place on square of waffle iron so that you get that nice square in the middle for the chicken to sit in.
