Hi everyone hope your all well, and hopefully fighting this years flu season!
Today I decided I would share my chicken soup recipe , this is something you can prepare early in the week and eat it for lunch & dinner, this is also great if your feeding your baby solids and don't have time to cook up a batch of food !
Food is medicine and it's starts from good nutrition.
I start with a whole chicken or a chicken carcass, you can use your kitchen scraps from your Veggies, tops of onions, carrots , celery , I also add garlic which is good for a cold and flu, then I also add a pinch of Himalayan salt & a bit of apple cider vinegar , when making any bone broth it's important to add these two as it extracts all the minerals and nutrients, bring this to a boil and simmer for a minimum of 1.5 hours.
Cut your choice of veggies, I'll use leaks, carrots, celery, pumpkin , potatoe , zucchini & a leafy green ie spinach, silver-beets , Asian greens , kale ect. Then drain your stock and bring to a boil, then add your veggie & You can also add some herbs, sage & thyme are great as they are both antiseptic.
If your feeding your baby this (6 months +) either blitz this or pop it in the food processor and there you have a nutritional healthy soup that both you and your baby can eat, and will last in the fridge for days!
