Friday's always call for easy dinners 😴and this zoodle dish with a vegan spinach pesto definitely fit the bill. Packed with nutrients and ohhhh so tasty. The pesto is so versatile too, it would be wonderful on anything from pasta to eggs! .
To a food processor I added 1 1/2 c. basil, heaping 1/2 c. @iloveorganicgirl
spinach, 5 cloves garlic, 2 tbsp. lemon juice, 1/8 tsp. pink sea salt, 3 tbsp. nutritional yeast, and 3 tbsp. pine nuts. Purée until a thick mixture forms, while the processor is running add in water 1 tbsp. at a time until it reaches your desired consistency, I think I ended up adding 5 for a pourable texture. Topped with extra nutritional yeast for that 🧀 taste 🤤. Happy #friyay
