Lentils are very #nutritious
💪🏼here are some of it's #health
✔️they have a low glycemic index, thus preventing sudden increases in blood sugar. Instead, they help stabilize blood sugar levels, and provide a sustained source of energy 💪🏼
✔️they are an excellent source of #plantbased #protein.
✔️lentils have an alkaline effect on the digestive system, which counteracts any acidic environment in the #gut
that causes imbalances in #gut
bacteria that trigger disease.
✔️lentils contain soluble fiber which help reduce cholesterol levels. Soluble fiber can also slow down digestion, making you feel full for longer (An option for shour perhaps😉)
✔️they are rich in insoluble fiber which is excellent for the digestive system as it speeds passage of waste through the digestive tract (getting rid of toxins too).
✔️they are rich in folate, iron, manganese, copper and phosphorus.
There are numerous ways to make lentil soup.
One way is to boil 1 cup of red lentils in about 3 cups of water (or vege stock). Add 2-3 chopped carrots and 1 tsp of cumin. Finely chop 1 small onion, sauté in 1 tbsp olive oil and add to the lentils. Let boil for 45 minutes. Add more water if needed. Blend until smooth. You may also add potato and pumpkin as well 😃
