Heck ya for October and pumpkin everything!!
Today I’m stuck at home, sick, and I’m being forced to take a day off from the gym. I decided to bake this pumpkin bread!
-1 tablespoon melted coconut oil
-2 tablespoons Manuka honey
-1/4 cup yogurt
-1 cup pumpkin purée
-1.5 tsp pumpkin spice (how to make pumpkin spice: 1/2 tsp cinnamon, 1/2 tsp ground ginger, 1/4 tsp nutmeg, 1/4 tsp ground cloves)
-1 tsp baking soda
-1 tsp vanilla
-1 3/4 cups whole wheat flour
A dash of salt
Mix in the oil and honey, add the eggs and pumpkin purée, vanilla, baking soda, yogurt, and spices. Once they’re all mixed, add the flour and mix it in with a spoon. Bake on 160 for 30 minuets or until it’s done!
