So I'm officially one week over 30!!! 😫 it's no that bad!!! Thank you for all your beautiful wishes!! I had the best week. Hubby surprised me with unicorn 🦄 (balloon) a work 😜 He knows me well 🤣 Today I thought I share my recipe for my DARK CHOCOLATE MATCHA CELEBRATION CAKE 🍫💚 I made for my work colleagues on my birthday. They loved it!!! It's super easy (coz I'm a lazy cook), vegan, gluten free, dairy free and almost sugar free. So you can have 10 slices 😂😂😂 Enjoy xx Ingredients For the matcha crust: 3/4 cup buckinis/buckwheat grouts 1 1/2 cup desiccated coconut 150g rice malt syrup 1 tbsp of  @just_blends matcha powder 1/2 tsp salt For the dark chocolate matcha filling: 400mL coconut cream 200g 70% dark chocolate 1/2 cup coconut oil (melted) 2 tbsp of @just_blends matcha powder Toppings: Extra matcha powder Desiccated coconut Fresh fruit Mint leaves Method In a food processor, process the buckinis and coconut until fine. Add the rice malt syrup, matcha and salt and processed until incorporated. Press the crust mixture a 23cm diameter tart pan. Chill in the fridge while starting the filling.Heat the chocolate, coconut cream, oil and matcha in a pot over low heat, stirring until everything is melted and combined.Pour the filling into the crust and chill in the fridge until the filling has setWhen ready to serve, dust with extra matcha powder and decorate with fresh fruit, mint leaves and desiccated coconut

Today I ran my fastest mile and my fastest 5km in probably 3 years. As of today I’ve run 6km farther than last month, and I weigh less than I have in years. Every day to me now is about getting through each day, taking care of myself, and building upon the years of hard work it’s taken me to even get to this point: zero. Every run, every meal, every rest will get me where I need to go in both my running career and life. Taking care of your soft self in a hard world is tough, and it may take years of sacrifice to even be able to tolerate it all. I could take or leave the run I had just now, however I’ll take a moment to say to myself: you’re on your way. I’m pretty proud of that.
