Millefeuille croustillant « caprice d’enfant », gourmandise - This was a millefeuille to end all millefeuilles. As a table of 6, we all ordered the millefeuille (or Napolean as it was described to us) which meant that the kitchen could prepare an entire one to order. The pastry was warm when it was delivered to the table, suggesting that the whole thing had been prepared a la minute. This dessert was all about the pastry and this is hands down a master who understands pastry work. The puff pastry was crumbly, delicate, glass-like but yet had enough body to hold the weight of the entire construct. More importantly though, there was complexity in its taste - salty, nutty, caramel and slightly bitter. No crème pâtissière here. The filling was a simple case of seasonal fruits, in our case strawberries, fresh and compote. The dish relied on natural fruit sugars, rather than lashings of caramel or indeed over sweetened compote, which I found a joy to eat. In essence, the pastry, the star of the show, was used as a vehicle to showcase the beautiful fruits that was available on the day. The creamy hit came from the rose ice cream, churned to order, that came with it. Mignardises: Apricot Macaroons, Honey Toffee, Rose Palmiers, Thyme Tuiles, Mini Millefuilles. A lovely platter of sweet treats to nibble on while waiting for our millefeuille. This was a little prelude and hint as to how technically sound the kitchen was with pastry.
