Last month I went to Le Pré Catelan restaurant, one of the ten 3 Michelin Stars restaurants in Paris. At the middle of the wonderful Bois de Boulogne, the restaurant chef is @fredericanton
who was a MOF (meilleur ouvrier de france, it's a craftsman competition) in 2000. It was a very good experience, with really well balanced dishes. I ordered the tasting menu (le menu du Pré) and it was really good. The dish that surprised me was the langoustine, prepared like a ravioli but instead of normal pasta it was covered by a really thin layer of gelatine, and a foie gras cream. As a future chef and foodlover, at the end of the dinner i asked for a sample of the menu with chef's signature for my collection, but unfortunately he wasn't there, but as a person who gives attention to the customers, he wrote back to me and send the menu to me.
