Came home from Orlando with an overwhelming urge to bake and the fam was certainly not complaining 🙃 These chocolate chip coconut collagen cookies are seriously one of the best cookies I’ve ever had (shoutout @sarafit_nf
for the recipe)👏🏻 They’re gluten and dairy free and the added @tonicproducts
collagen protein powder is flavorless and packs these cookies with protein 🙆🏻♂️ For those of you who don’t know, collagen protein promotes bone and joint health, a healthy gut, aids in weight loss, and assists in the regeneration and elasticity of skin and hair 🙌🏻 .
Chocolate Chip Collagen Cookies:
1/2 cup coconut flour @traderjoesfood
3 scoops collagen protein @tonicproducts
6 tablespoons coconut sugar
1/4 tsp baking soda
1/4 tsp salt
3 large eggs
1/3 cup coconut oil melted
1 heaping tsp vanilla extract
1/2 cup dairy free chocolate chips @enjoylifefoods
Preheat oven to 350ºF. In a bowl, combine coconut flour, collagen, coconut sugar, baking soda, and salt. Add in eggs and vanilla, and stir till combined. Next add coconut oil then fold in chocolate chips. Combine until a thin dough forms. Wet hands and roll dough into balls and slightly flatten, then place on cookie sheet with parchment paper. Bake approximately 12 minutes, or until the bottom of the cookies turn golden brown.
p.s. These cookies freeze great so double the recipe if you'd like 😏
