Here is my absolute favorite way to enjoy fall flavors in morning - pumpkin spice protein "oats" topped with all of the pumpkin spice cereals, roasted pepitas, blueberries, and chia/flax/hemp seeds
Guys this bowl literally tastes like a piece of pumpkin pie, I love it SO much!! Plus it's so simple and quick to put together!
This recipe uses riced cauliflower instead of oats to keep the carbs low. I promise you do not get a cauliflower taste so don't knock it until you try it!! Sometimes I will heat up some oats to mix in with my cauliflower if I feel like I need some extra carbs for days that I'm training legs or shoulders. I am just focusing on my back today so I stuck with just cauliflower.
85g riced cauliflower
vanilla protein powder
70g pure pumpkin puree
6g roasted salted pepitas
Approx. 2 tsp @flavorgod
pumpkin spice (more or less depending on how you like it)
Extra sprinkles of cinnamon, allspice, and nutmeg
Splash of unsweetened vanilla cashew or almond milk
Topped with puffed brown rice, pumpkin spice cheerios, pumpkin spice life cereal, pumpkin spice frosted mini wheats, and seeds
In a bowl mix together cauliflower rice, protein powder, pumpkin puree, and spices with just enough milk to make a thick oatmeal-like consistency. Top with blueberries, cereals, pepitas, and seeds.
