Sweet Potato with Marinated Roasted Chickpeas drizzled with Lemon Tahini sauce by @rawspirations 💛  @letscookvegan To make you simply bake a whole sweet potato in its skin for over an hour till cooked through, (brush with coconut oil). In a seperate baking dish add about 1 (400g) tin organic chickpeas (Wash under water first), then marinate in 1 TBs olive oil, pinch Celtic salt & a handful chopped fresh garden parsley. Roast in oven until lightly browned. Then drizzle with some lemon infused tahini sauce and serve on a bed of mixed mesculan lettuce, 4 varieties of sprouts, heirloom tomatoes & pepitas drizzled with fresh lemon juice, coconut amino sauce, Celtic salt, a tiny amount of olive oil & a sprinkle or nutritional yeast.

Buffalo Cauliflower Tacos!🥑🔥 What's on my plate? •Buffalo Cauliflower (recipe below) •3 leaves Butter Lettuce •1/3 cup Black Beans •37 grams Avocado ••• How to make the buffalo cauliflower: 1. Chop up 1 head of cauliflower into bite-sized pieces and mix in bowl with 1/4 cup of flour (I used sprouted spelt flour) with 1/4 cup water. This creates a breading for the cauliflower. Bake at 450 F for 15 minutes. 2. Take out of oven and pour on hot sauce/buffalo sauce (I used Frank's RedHot Wings buffalo sauce) and add some salt, pepper, and garlic powder. Mix and put back into oven for 20-25 minutes, or until crispy! 3. Serve on corn tortillas, lettuce cups, sandwiches, salads, etc.

Raw Vegan Pad Thai I used a spiraller to make the noodles with carrots, zucchini, beets. Thinly sliced red pepper, mango, kale, red onion, edamame. Then a sprinkle of cilantro, green onion, cashews. Fresh avocado and for the meat eaters out there, add some shredded boiled chicken. A gorgeous 88 degrees in SD this weekend, I mean.... how can I not fire up the grill?!🔥 This weeks #mealprep on the grill I tossed chicken breast, New York strip steak, and sweet potato. Sweet potato is topped with plain Greek yogurt and green onions. First time grilling up Brussels sprouts and it won't be my last! 💪T minus 2 months until vacation🌴, which means hitting the gym extra hard and meals will be high protein loaded with a side of veggies and complex carbs. Pão indiano de frigideira INGREDIENTES MASSA 250 ml de iogurte natural; ½ colher (sopa) de açúcar; ½ colher (sopa) de sal; ½ colher (sopa) de bicarbonato de sódio; 2 xícaras (chá) de farinha de trigo (380 g). RECHEIO 200 g de queijo minas padrão ralado no ralo grosso; 200 g de queijo muçarela ralada no ralo grosso; 100 g de queijo parmesão ralado no ralo fino; 1 ovo batido; 1 colher (sopa) de farinha de trigo. MODO DE PREPARO MASSA Numa tigela coloque 250 ml de iogurte natural, ½ colher (sopa) de açúcar, ½ colher (sopa) de sal, ½ colher (sopa) de bicarbonato de sódio, 2 xícaras (chá) de farinha de trigo, misture e sove bem a massa. Divida a massa em 4 bolas e deixe descansar por 15 minutos. RECHEIO Misture numa outra tigela 200 g de queijo minas padrão ralado no ralo grosso, 200 g de queijo muçarela ralada no ralo grosso, 100 g de queijo parmesão ralado no ralo fino, 1 ovo batido e 1 colher (sopa) de farinha de trigo. Divida em 4 porções e reserve. MONTAGEM Com um rolo abra cada bola de massa numa superfície lisa e enfarinhada. Coloque no centro da massa uma porção de recheio de queijo (reservado acima) e feche formando uma trouxinha. Passe o rolo sobre a trouxinha, com cuidado, amassando até formar novamente um disco. Numa frigideira untada com manteiga, coloque o disco de massa e leve ao fogo médio por 2 minutos ou até dourar. Vire o disco de massa e deixe dourar do outro lado (+/- 2 minutos). This Asian style bowl took less then 30 minutes to prepare, it's a delicious filling dinner with full of flavor. (Bonus points: I had the prepped meatballs and bone broth ready in the freezer.) I don't have an exact recipe but here's what I did. •Asian meatballs: (adapted from @the_chefs_wife_) 1.5 lb Ground beef, 1 egg, cilantro, shallots, chives, fresh grated ginger, crushed garlic. Mix all the ing form balls and brown in a frying pan on all sides. •Add coconut aminos (or soy sauce), a little mirin, fresh ginger, and garlic to chicken soup or bone broth and cook for 15 min, remove the garlic and ginger. •Meanwhile sear the bok Choy in the pan you used for the meat or steam it in the broth. Had some cooked rice to use up so I made a unfried rice with crumbled tofu, onions, carrots, orange bell pepper, red cabbage, and zucchini...seasoned with tamari, curry powder, gochujang, onion and garlic and ginger powder, and a little sesame oil. Served over spinach and topped with scallions. Delicious! 🌈😋❤️

Today's dinner was chicken baked in my homemade peanut sauce on a bed of basmati rice and vegetables. I like to stir my vegetables in my rice because 1) it really bulks up my meal and keeps me fuller for longer and 2) it's easier for me to eat my veggies if they are mix in with something else. I've always had trouble eating vegetables by themselves and mixing them with other foods really helped me increase my daily vegetable intake 🍄🌶
SUFLÊ DE LEGUMES FUNCIONAL  Ingredientes: 1 xícara (chá) legumes cozidos e picados (vagem, cenoura, chuchu, entre outros) 2 gemas 4 claras 1 copo de “leite” (extrato) vegetal 2 cebolas pequenas picadas 2 colheres (sopa) de manteiga ghee 2 colheres (sopa) de farinha de trigo integral Temperos a gosto: noz moscada, açafrão, orégano e sal marinho Modo de preparo: Misture as gemas com o leite e reserve. Bata as claras em neve. Em uma panela, refogue a cebola com a manteiga ghee e acrescente a farinha de trigo integral, em fogo baixo. Adicione o leite já misturado com a gema, a noz moscada e o açafrão e mexa bem para não empelotar. Desligue o fogo. Em um refratário que vá ao forno, misture os legumes, o sal e o orégano com a massa das farinhas e gemas. Delicadamente, incorpore as claras em neve, até que fique uma massa uniforme.
