This Asian style bowl took less then 30 minutes to prepare, it's a delicious filling dinner with full of flavor. (Bonus points: I had the prepped meatballs and bone broth ready in the freezer.)
I don't have an exact recipe but here's what I did.
•Asian meatballs: (adapted from @the_chefs_wife_
1.5 lb Ground beef, 1 egg, cilantro, shallots, chives, fresh grated ginger, crushed garlic. Mix all the ing form balls and brown in a frying pan on all sides. •Add coconut aminos (or soy sauce), a little mirin, fresh ginger, and garlic to chicken soup or bone broth and cook for 15 min, remove the garlic and ginger.
•Meanwhile sear the bok Choy in the pan you used for the meat or steam it in the broth. Steam julienned carrots, mushrooms, broccoli and/or whatever veg you like in the broth.
•cook the ramen noodles according to package instructions.
•To serve assemble the bowl with all the fix ins, add the broth, and garnish with Thai chili pepper, scallions, cilantro and lime.
