Happy Tuesday!! I hope you all are making the most of your morning! Here is a little reminder to take a moment to practice thankfulness this morning. I know I need it. The jet lag kicked in and I woke up late and cranky 😖 * * * My first reaction would normally be to stress out, putting me in a bad mood and inflaming my system...but today I am reevaluating and working on practicing Shiva, the art of letting go. Letting go of my expectations for the morning, for the week for the next month and just living in the here and now. Allowing myself to realize that I have no control over what already happened all I have is the now and how I choose to handle it. So instead of getting upset over the jet lag I am thankful for the fact that I have jet lag, that I was able to have such an amazing experience. That I returned home safe and sound, and that I was gifted another day. For we are not guaranteed our next breath. * * * PS this iced coffee was pretty much the best way to break a coffee fast a girl could ask for. The most delicious FRENCH TOAST I’ve ever made to date...so full of sweet flavors from @fourthandheart Madagascar vanilla bean ghee 😃 One of my favorite ways to make butternut squash and one of my favorite flavors from their line of ghees! I also like adding a tsp to my coffee 👌🏻Ok onto how to put this gem together: ... For the toast: slice a THICK slice of organic french bread and coat both sides of bread in a shallow bowl with one scrambled egg and a dash of cinnamon. Cook bread on both sides in a small skillet until golden brown. ... . For the squash: melt 1 heaping tablespoon of @fourthandheart Madagascar vanilla bean ghee and toss together with organic butternut squash (I buy mine pre-cut-saves me so much time!) and cinnamon. Roast at 350 on a baking sheet in the oven for 20-30 minutes, broiling at the end until tender. I like mine a little crisp! ... . To assemble: top your toast with yogurt, (or cream cheese) butternut squash, pomegranate seeds and chopped hazelnuts 🌰 ... Next step: grab a fork and a knife...DIG IN! 🍓 Strawberry Chia Pudding with Toasted Granola Mix 🍓 ▫️ Quick Healthy Snack Idea! Swipe for the key ingredients that I’ve used ⏩ ▫️ Soak 3 Tablespoons of Chia Seeds in 250 ml of Almond Milk (or any other plant based milk) for atleast 30 mins (I’ve got mine for 5 hours just because why not 🤗) ▫️ Topped with fresh organic strawberries (chopped into desired amount) and toasted granola mixed with raw nuts. ▫️ Sprinkle Shredded Coconut flakes at the top for some aesthetic photos for IG 🤩 ▫️ Devour and enjoy knowing that you’ve done a very well favour for your own health! ▫️ With love and gratitude, Amituofo 🙏
**Appreciation post** Yesterday it was #motivationmonday and I always seem to miss it 🤦🏻‍♀️but I was thinking about what motivates me...I’m not always motivated but one of the reasons I actually do keep going Sometimes is because of you guys... I’m motivated to be the best I can and keep going, keep trying new things, sweat it out, cry a little, push through the ideas of giving up etc. so that I can always speak from experience and understand truly what you’re going through or struggling with. You learn best from experience & learning about the body and how it adapts and is affected by certain things interests me, so I’m also motivated through learning. I always aim to share my honest and true experience with foods/exercise/ life’s ups and downs with you & help you with yours 🌸 . I want to thank all of you for your amazing messages/comments/questions — they honestly make me so happy & often turn my day around. I remember one girl mentioned me in a comment a few weeks ago and I sat at my kitchen counter crying tears of happiness because her message was so amazing. I’m sorry I haven’t been storying/ blogging so much- I’ve been in the midst of the dreaded exam period but I promise to bring you fire 💥content soon 😘 . Also massive appreciation to my mama whom I got to have lunch with today ❤️ . I’m forever grateful for it all. What are you grateful for? 🌼 what motivates you?
Avocado toast with coconut bacon 🤪 ~ Fiz este “bacon” de côco em colaboração com a @veganvibebox para vos mostrar como podem usar o côco que vem na box! Receita 👇🏼 Ingredientes: - 1 pacote de coconut curls salgadas da @apesnacks + @veganvibebox - 1 colher de chá de óleo (côco, ou outro que aguente altas temperaturas) - 1 colher de chá de molho de soja - 1 colher de chá de xarope de agave ou acér - 1/4 de colher de fumo líquido (opcional mas recomendo muuuito) - pitada de pimenta - pimentão doce em pó até cobrir o côco. Instruções: 1- Pre-aquecer o forno a 160C com a ventoinha ligada; 2- Misturar todos os ingredientes com o côco até que esteja completamente coberto; 3- Espalhar bem sobre um tabuleiro pequeno forrado com papel vegetal e levar ao forno durante 5/6 minutos. 4- Ir vigiando e mexendo o côco a cada minuto pois pode queimar em pouco segundos e depende de forno para forno. P.S.- Podem parecem moles mas depois vão endurecer quando arrefecerem. Enjoy! 🥦🥒🥑
