Tricolor quinoa pasta with simple thyme and tomato sauce by @panaceas_pantry
To make the pasta sauce
1 Tbsp olive oil (I like extra virgin)
4 cloves garlic, crushed
1 can organic, crushed tomatoes
1/2 tsp good-quality salt
1/2 tsp dried thyme
1/2 tsp dried Italian herbs
1. Heat olive oil in a saucepan over low heat. Add garlic and cook for 30 seconds.
2. Add remaining ingredients. Bring to the boil then simmer for 15 minutes.
3. Serve with freshly cooked pasta (simply follow packet instructions), avocado and toppings of choice.
