there is a new, interesting spot on London's restaurant map. a variation on the Japanese cuisine, a fusion of traditional Japanese cooking techniques with new, surprising touch. and although some culinary purists searching for 'authenticity' would not probably find their culinary haven at @sushiatelierlondon
, everyone who is after a culinary adventure will feel at home. Clam Ceviche with whisky jelly, Butterfish Carpaccio or Hot Tofu with apple and walnut crisp are only a few options from the menu.
i never think of tradition as static, a remnant from the past - I prefer to see it as something constantly evolving and changing, and is reinvented as new generations come. Sushi Atelier represents all this: old Japanese cooking techniques, traditional ingredients and seasonings with a touch of what some would probably call 'modernity', but what comes to my mind when I think of yesterday's food is: creativity.
