meal makeover is HEALTHY CHINESE Sesame Chicken! This goes out to @keltykelt
because its a quick 20 minute meal for busy moms on the go!
24oz boneless, skinless chicken breasts (cut into ½ inch strips)
1/2 lb of green beans
2 Tablespoons cornstarch
Salt, pepper, and crushed red pepper to taste
Cooked grain for serving (I used quick cook quinoa)
For the sauce
3 Tablespoons soy sauce
2 tablespoons honey
1 teaspoon sriracha
1 teaspoon fresh ginger, grated or 1/4 tsp of ginger powder
1 clove garlic, minced
2 Tablespoons sesame seeds
1 tablespoon sesame oil
In a large bowl combine the chicken, cornstarch, and a pinch of salt, pepper, crushed red pepper.
Put green beans in a microwave safe bowl, fill halfway with water and steam in microwave for 2-3 minutes
Spray a large pan with Pam or another nonstick spray. Heat the pan to high heat and add chicken to pan.Stir-fry chicken for 7-8 minutes or until it's golden brown. Add the cooked green beans.
In a medium bowl, combine the soy sauce, honey, sriacha, ginger, garlic, sesame seeds and sesame oil.Add the mixture to the chicken and green beans and allow sauce to simmer for 3-4 minutes or until the sauce is thick and sticky.
Remove chicken from pan, sprinkle more sesame seeds if desired.Serve on grain of your choosing
