Serves: 4 Preparation time: 10 minutes Cooking time: around 45 minutes Total time: around 55 minutes Macros per serving Calories 517 Protein 42g Carbs 12.3g / of which sugars 9.9g / fibre 4.4g Fat 33.8g / saturates 24.7g/ monounsaturated 4.9g / polyunsaturated 1.4g / omega 3 fatty acids 1.1g What you will need 40g butter 3 chicken breasts around 200g each 3 garlic cloves, crushed 150g sweet mini peppers, finely sliced 3 tablespoons Tandoori curry powder 1 teaspoon ground coriander 1 teaspoon cumin 1 x (400g) tin of chopped tomatoes 250ml coconut cream A handful fresh chopped coriander Black pepper to season How to make me Heat the butter in a large deep frying pan. Sea the chicken on all sides, this should take around 3 minutes, then add the garlic, sweet mini peppers, tandoori curry powder, ground coriander and cumin. Cook for a further 2 minutes. Now stir in the tinned tomatoes, and bring to a simmer. Cook for 30 minutes until the sauce thickens, stir occasionally to avoid burning. After 30 minutes stir in the coconut cream. Cook for a further 10 minutes, then Serve.
