Dark chocolate PB cup cookies with just F O U R ingredients 🎄🍪 >> Baking cookies is hands down my favorite thing about Christmas. 🎅🏽 When i was in college and studying for finals, i would spend my study breaks researching all of the new cookie recipes and decorating ideas i wanted to try once i was home for break. Then i would come home and have marathon days of baking, cookie decorating and making gingerbread houses. 🎅🏽 Not much has changed (aside from the fact that i don’t have a month off over the holidays! Ha) and i have spent the majority of my weekend baking Christmas cookies! Recipe below.
✨✨✨✨ Dark chocolate PB cup cookies:
🔹1 cup @crazyrichards
🔹1 cup brown sugar
🔹1 container of @traderjoes
dark chocolate PB cups (or other package of PB cups of your choice)
>> Combine PB, brown sugar and egg in a bowl and stir to combine. i like to then refrigerate the dough for a bit to firm it up (not sure how necessary this is, but i always do it this way). i refrigerate for at least an hour. Spray mini muffin tin with coconut oil spray and set aside. Preheat oven to 350 degrees. Remove dough from refrigerator and roll small balls of dough. Place a ball in each mini muffin cavity. Bake for 10-12 minutes. While the cookies are baking, open the container of PB cups and remove wrappers. Once cookies are done baking, remove from oven and immediately press one dark chocolate PB cup into the center of each cookie. Press down firmly. Let cool. i then removed these from the muffin tins with a fork, but toothpicks or anything else that will help to loosen the sides of the cookie from the cavities would work well, too. Enjoy! *This made 24 mini muffin-sized cookies for me and i still had some dough leftover.
