I'll be visiting my grandson at school tomorrow for grandparent day and get to have a picnic lunch. We will be having homemade Gluten free chicken nuggets, guacamole, salad, fresh fruit and Blueberry Protein Muffins (of course Nana always bakes them a snack) 😍Protein is also beneficial for children. It is essential in growing, repairing and replacing tissue. It also promotes a healthy metabolism and helps to boost the immune system. They especially need that while at school wouldn't you agree?
Blueberries are one of the most nutrient-dense foods in the world and contain large levels and have the most disease fighting antioxidants than any other fruit. Pretty awesome for such a small fruit and one of my favourites 💜

Blueberry Protein Muffins
Preheat oven 170°C / 325°F / Gas Mark 3
2 cups almond meal
1/4 cup vanilla protein powder
1 tsp cinnamon
1 tsp nutmeg
1/2 tsp salt
1 tsp baking powder
1/4 cup coconut oil (melted)
1/4 cup rice malt syrup or honey
1 tsp vanilla extract
1 tsp apple cider vinegar
1/2 cup fresh or frozen blueberries
Pre heat oven
Put muffin papers into muffin pan
Mix dry ingredients in a bowl - almond meal, protein powder, cinnamon, nutmeg, salt & baking powder mix through to combine and make sure there are no lumps.
In a blender/food processor mix all wet ingredients and blend until combined - coconut oil, rice malt syrup, eggs, vanilla & apple cider vinegar.
Add the wet mixture to the dry mixture and mix thoroughly until thick and fluffy. Add the blueberries and fold through.
Spoon mixture into each muffin paper 3/4 full.
Bake for 20-25 mins (makes 12 large muffins)
