This is the kind of meal that I never want to end 😩 More like I wish I never had to run out of baked Japanese sweet potato rounds. Had some of those for lunch today along with cucumber, tomatoes, peas, spinach, and avocado 🥑 If I could meet all my nutrient needs off of one food it would be potatoes, hands down! The day has yet to come when I get sick of them. It’s actually kinda warm out today, (when I saw warm I mean being outside is bearable 😅) so I think I’m gonna go for a walk with my dog. It always feels good to move especially after a filling mea like this 😌 Hope you are all having a great Monday so far!

A satisfying and comforting bowl of vegan Jjajangmyeon noodle is what I want on this cold and rainy Monday. Sorry it's taken me so long to share the recipe. Work and school have been crazy, but I finally cooked up a pot yesterday just to share it with you guys. Below is my vegan version of Jjajangmyeon so hope you enjoy it as much as I do. INGREDIENTS 1 cup of dry assorted mushrooms/Shiitake (rehydrate in hot water 30 mins) 1 1/2 cup of reserved mushroom liquid 3 medium zucchini, cut into chunks 1/2 a medium size cabbage, cut into chunks 1 large onion, cut into chunks 5 garlic cloves, minced 4 tbsp fermented black bean paste 2 tbsp unrefined sugar 2 tbsp mushroom seasoning 2 tbsp cooking oil 1 tbsp ginger, minced 1/2 tsp black pepper 2 tbsp corn starch COOKING DIRECTIONS 1. In a bowl, combine 1 1/2 of hot water with the dry mushroom and rehydrate for 30 minutes. 2. After 30 minutes, squeeze all the liquid from the mushroom and slice. Make sure to reserve the mushroom liquid for later use. 3. In large pot/skillet, add cooking oil, garlic, ginger, and fry until slightly brown. 4. Next add in the fermented black bean paste and fry for 30 seconds. 5. Now add in onion, zucchini, cabbage, mushroom, mushroom liquid, and cook for 15 minutes. 6. Then mix corn starch with some cold water and add in pot to thicken the Jjajangmyeon sauce. Cook for another minute and remove from heat. 7. Serve with Korean fresh noodle/Japanese udon noodle and topped with fresh julienned cucumber. Drizzle a little sesame seed oil, mix well, and enjoy!

ARROZ CON BERENJENAS AL CURRY No veáis que olor me ha quedado en casa. Todavía a estas horas parece que vivimos en Delhi 😂😂. Me entran ganas de cantar: " del pita pita deeeeel....🎶" Bueno, que no tiene mucho misterio el plato, arroz blanco por un lado. Las berenjenas he seguido a @hoycomemossano y las he hecho más o menos como ella. He picado media cebolla y la he echado a sofreir con un poco se aceite. Cuando está un pelín hecha, he añadido la berenjena en taquitos. Sofreir un poco y echar sal y curry. Ah! Mi aportación,un poquito de cayena molida. Después como medio vaso de agua o un pelín más. Y las he tenido un rato a fuego bajo,en total desde el principio igual unos 35-40 minutos. Las cantidades un poco a ojo.
