Santa Fe chicken & rice... Dice up a chicken breast or two, and sauté in a wok with extra virgin olive oil, chili powder, ground cumin, crushed red pepper, cilantro, garlic, and fresh onion. Then add a cup and a half of uncooked brown rice, two cans of diced tomatoes with green chiles, a cup-ish of frozen corn, a can of rinsed black beans, a cup-ish of water, and a handful-ish of frozen peppers & onions. Bring it to a boil, then simmer on low until most “water” is absorbed.
