☇☇Favorite things Friday!!☇☇ Last night was a special splurge night with some girlfriends. Why? Because it's the holidays and I'm SOOOO very human. Today I was pretty anxious to get back to clean eating but it is a crazy one with parties at the school all day. This is my favorite easy lunch in a hurry. They sell it at Costco and it is organic with completely real ingredients. Everything listed on here I would have in my pantry. I obviously aim to prep and eat my own fresh meals but let's be honest, life happens! It is nice to have something easy around for moments like that so I don't resort to something worse. I’ve given myself a challenge to not eat any processed sugars for at least a few days ( and because I am A MASSIVE snack and sugar lover, this is definitely a challenge!) 🍫🍬🍭 . Therefore, when I was craving my normal sugars and chocolate ( basically raiding my mothers “secret” candy cabinet ), I went in my freezer instead and got out; 🔘Frozen raspberries 🔘Frozen banana 🔘Almond milk 🔘Pomegranate seeds 🔘Honey . HEALTHY ENCHILADA HACK!!! Chicken Zucchini Casserole Enchiladas Style Print Yield: 8 servings Ingredients Enchilada Sauce: 24 oz tomato sauce (passata, strained or crushed tomatoes)2 tsp organic taco seasoning1 tsp cumin, ground1 tsp garlic powder1/2 tsp salt1/4 tsp black pepper, ground Chicken: 1.5 lbs chicken reasts, boneless & skinless1/2 tsp organic taco seasoning1/2 tsp cumin, ground1/2 tsp garlic powder1/2 tsp salt Casserole: 3 large zucchini, cut lengthwise into 1/8" thick slices3 tbsp quinoa, uncooked & divided1 1/2 cups (6 oz) mozzarella/cheddar/pepper jack etc. cheese, shredded0.5 - 1 jalapeno pepper seeded, diced (for kids version use 0.5) Directions In a medium bowl, stir Enchilada Sauceingredients and set aside.In another medium bowl, combine Chicken ingredients, mix with your hands and let marinate for 5 - 10 minutes while you are slicing zucchini.Preheat large skillet on medium heat and add chicken. Cover and cook for 10 - 12 minutes, turning once. Let cool a bit, transfer to a cutting board and shred using 2 forks.Preheat oven to 375 degrees F. In a medium 8" x 11" baking dish add a few tablespoons of Enchilada Sauce, spread to coat and sprinkle with 1 tbsp of quinoa. Place sliced zucchini widthwise (cut some slices in halves to fit into the end of the dish) overlapping a bit to create a single layer. Spread half of chicken, then half of Enchilada Sauce, top with half of cheese and jalapenos, and sprinkle with 1 tbsp quinoa. Repeat another layer, finishing with a layer of zucchini and sprinkling cheese on top.Bake covered tightly for 45 minutes, then uncovered for another 20 minutes and broil on High for 5 minutes or until cheese has browned. Let stand for 10 minutes before slicing. Love pizza?! Check out this healthy-er (lol) option! Substitute normal pizza dough with cauliflower! . . . . . Ingredients: . 1 medium head cauliflower 1/4 cup grated Parmesan 1 teaspoon Italian seasoning  1/4 teaspoon kosher salt  1 large egg  2 cups freshly grated mozzarella 1/4 cup Spicy Pizza Sauce Fresh basil 4 slices tomato 4 slices mozzarella . 1) Preheat the oven to 425 degrees F. Line a rimmed baking sheet with parchment paper. . 2) Pulse the cauliflower florets in a food processor to a fine snowy powder (you should have about 2 1/2 cups). Transfer the processed cauliflower to a microwave-safe bowl and cover. Microwave until soft, 4 to 6 minutes. Transfer to a clean, dry kitchen towel and allow to cool. . 3) When cool enough to handle, wrap the cauliflower in the towel and wring out as much moisture as possible, transferring to a second towel if necessary. In a large bowl, stir together the cauliflower, Parmesan, Italian seasoning, salt, egg and 1 cup of the mozzarella until well combined. Transfer to the prepared baking sheet and press into a 10-inch round. Bake until golden, 10 to 15 minutes. . 4) Remove the crust from the oven and top with the Spicy Pizza Sauce and remaining 1 cup shredded mozzarella, tomato and mozzarella slices. Bake until the cheese is melted and bubbly, 10 minutes more. Garnish with fresh basil just before serving.

FOR BURGERS: 1 pd ground beef 1 cup minced mushrooms 2 tsp paprika 2 tsp onion powder 2 tsp garlic powder salt and pepper, to taste 6 slices cheese (if desired) I used Sharp Cheddar Toppings: Top with your favorite burger toppings. Pictured toppings: Butter lettuce, arugula, homemade mayonaise, pickled red onions, avocado, sharp cheddar cheese, harissa for dressed arugula: 3 cups arugula juice of ½ lemon salt and pepper, to taste INSTRUCTIONS Mix all patty ingredients in bowl. Form individual patties, then put on grill or cook in skillet for 5-8 minutes per side until desired doneness (I like mine medium) For arugula, toss arugula with lemon juice, let sit for 2 minutes prior to serving. Ingredients and measurements subject to availability) 2 medium spaghetti squash (6-7 inches long) 2 organic chicken breasts ½ cup pesto, extra to taste 1-2 cups fresh baby spinach, torn/chopped 1 extra large carrot, shredded 1 medium red bell pepper, chopped Salt and pepper*, to taste 8 oz. shredded cheese 2 T. fresh parsley to garnish Olive oil* for cooking Pre-heat oven to 400 degrees F. Slice your spaghetti squash in half lengthwise and scoop out the seeds. For easy cutting if you don't have sharp kitchen knives, pop each squash in the microwave for 5 minutes to soften it up. The knife will cut completely through easier this way. Next grab a baking sheet or baking dish with sides so that the juices don't run into your oven. To prevent sticking, rub the cut side of the squash with a small amount of olive oil. Salt and pepper both sides generously. Place inside a baking dish or lined baking sheet and bake face-down for 30-40 minutes, or until tender and easily pierced with a fork. While the squash is baking, cook chicken completely either on stove-top or grill. Whichever you prefer. I always season well with salt and pepper. Cut chicken into bite sized pieces and toss with pesto. Set aside. In a medium-size pan, heat a little olive oil or coconut oil to medium-high heat and sauté your bell pepper and carrot for 3-5 minutes. Next add the spinach and pesto chicken and stir to wilt the spinach. Season with salt and pepper to taste. Next add your cheese to the hot mixture. Mix about ¾ of the cheese in with the chicken and veggies and save the rest for topping. Fluff your squash with a fork before stirring in the chicken and veggie mixture. Top with the rest of your grated cheese and cover the baking dish in foil, leaving a little room at the top (triangle shape) so the cheese doesn't stick. Bake at 350 degrees F for around 20-30 minutes or until bubbling. Garnish with fresh parsley, extra cheese, and enjoy! #RFfitness #RFWOD #RFRedemptionFitness

I just got a new @huromamerica juicer (it’s amazing!!) and I didn’t want to dump the pulp so I made crackers! 🥕🍏🍊 •Pulp •1 cup water •1 tsp chia seeds •1 tsp flax seeds •1/2 cup almond flour Blend, spread on parchment lined baking sheet and top with seeds and salt of your choice. Bake at 350° for 45 to 50 minutes 😋 😋😋
