Rooting is gaining full user access of the root directory. The root directory is practically the base of your phone below the operating system, system, data and even caches. This allows you to remove unwanted programs included by the manufacturer, thus allowing your phone more storage space. Rooting also allows you to speed up your phone(over clock), increase battery life(under clocking) by reducing the amount of apps allowed to run on your phone per time. It gives the ability to dictate what apps work and which doesn't and also dictate the limit of their functionalities.
However, apps are used to perform the rooting process and researchers have confirmed that the code used to build these apps can be easily exploited and through it malicious things can be done on your phone. Not that rooting itself is harmful but the apps used to achieve rooting could bring harm to your phone.
So, be careful! Only use stuff from trusted sources and monitor your devices for funny looking activities
