So #Bagels. Used the #ModernistBread #mixingmethod and #proofing times with my own proven recipe. Unfortunately the 1 1/2 hour final proof time after shaping was way too long and so they’re a little over proofed and flat. But the color is so much better with the addition of #BakingSoda (I won’t use Lye) and a #bakingtemp of 425°. The crust is really satisfying. I was a bit skeptic when the recipe called for just honey, banana and pumpkin for sweetener for these whole grain muffins but they turned out great! Obviously the skeptic I was I had to add a few chocolate chips for good measure! My first attempt at making healthier muffins was a success and maybe next time I will ditch the chocolate chips all together! (Or maybe not!)
