And we’re back from hiatus with Extra Fluffy, easy to make pancakes. Recipe below! Serves 2.
2017 has been a crazy year for my wife and I, we thank you for still sticking to our page, despite the year long silence (sorry for that). With a little more stability back in the picture, we’re here to offer you a little sweet something to light your mornings. > Mix dry ingredients well.
1/2 cup biscuit/pastry flour
1/2 cup self raising flour (just use a cup of this if you do not have biscuit/pastry flour)
1/2 tsp baking powder
1/4 tsp salt
1 1/2 TBSP raw sugar > Add wet ingredients to center of dry ingredients
3/4 milk (add incremental splashes if necessary)
1 tsp organic pure vanilla extract (because pure and organic does taste better)
1 1/2 TBSP plain Greek yogurt > Lightly mix batter. It’s okay to have tiny flour clumps, they will even out when cooking. Over mixing the batter will give you a rubbery texture.
> Place batter on a heated pan with butter (butter always gives the best flavour) and flip when the bubbles on the surface have burst.
> Serve with clementine slices, pecan nuts, dollops of crème cheese and lots of maple syrup! (Or basically - anything you love to have with your pancakes).
