Carrot Cashew Coconut Protein Bars🥕 Several failed attempts in creating this recipe. I steamed the carrots so this is not raw. You can try it raw, but I agree with the theory that cooked vegetables are easier for the body to breakdown. Some worry about nutrient loss. I say I'm ok with a little tiny loss. Being gentler on my body is a bigger priority for me. • I used @sproutliving Organic Plant based Epic Protein Powder (original flavor) here. It has five ingredients that you can actually pronounce. #recipedeveloper Recipe · 1 cup raw cashews, soaked and drained · 1/4 cup coconut butter or coconut oil · 1 cup chopped steamed carrots · 2 Scoops of Protein Powder · ½ Cup Coconut pulp, shreds, or flakes · 2 tbsp maple syrup or 2-3 dates (optional) · ½ tsp vanilla extract · ½ tsp Cinnamon · pinch of sea salt · Coconut flakes, cacao nibs and chopped cashews to top 1. Pulse cashews with coconut oil in blender. Here is where you decide if you want crunchy or creamy texture. 2. Add steamed carrots and the rest of the lot, blend. Again determine texture when belnding. I may leave it more chunky next time. 3. Add carrots back in and add remainder of ingredients. Pulse until a dough forms. 4. Place in mini baking pan mold shape of your choice, top with whatever you want, I made some suggestions above. 5. Freeze for at least an hour. Check texture. | One coconut yields 4 pint of milk ↠ I revised my earlier recipe. The coconut to water ratio was too high making it a little too rich and heavy for my taste, but maybe you're all about that full body. • I harvest about 2 cups of meat per coconut. Add 4 cups of filtered water per cup of coconut meat and blend. Add vanilla and sweetener if that's your thang. I love vanilla so it's a must have, but left out the sweetener. Tahini is so amazing, yet not very common in most recipes in the U.S. It's got a ton of healthy fats, amino acids, protein, fiber, and can help balance hormones! A perfect alternative to nuts. #TahiniParty #poweredbyplants • Here's my recipe👉🏻 1 Cup Coconut pulp (shredded or flaked ok too. I used the leftovers from the milk) 1/2 Cup Coconut oil, melted 1/4 Cup Tahini 1/4 Cup Hemp Seeds 1/4 Cup Pepitas 1/2 Cup Walnuts 2 Tbsp Cacao Nibs 1 Tsp Cardamom 2 Tbsp Maple Syrup 1/3 Cup Coconut Milk Blend all the above in a food processor until everything is broken down, and doughy. • Roll into bite sized balls then lay flat on a air-tight container and freeze. They last for months but they're so delicious I bet they won't. • Remove from freezer and let thaw 6 minutes before eating for optimal deliciousness!
