The amount of chocolate I packed into my little birthday cake is kind of incredible. You can see below for flavor details, but before you do that, I want to say a big thank you to YOU - all fifteen thousand of you! Especially because I hit 15k on my 15th birthday, which just seems too good to be true. Your support and interest in this passion of mine is so special to me. ❀️ - This is three layers of chocolate cake filled with chocolate ganache, frosted with hazelnut chocolate chunk buttercream, covered in chocolate glaze, and adorned with chopped hazelnuts, hazelnut dark chocolate espresso macarons, and buttercream dollops. - Yes, it may be a *little* over the top, but since when is that a bad thing? What, did you expect me to let someone ELSE make my birthday cake?? Of course not! πŸ˜‚ This triple chocolate masterpiece is currently sitting in my refrigerator and I'm counting down the hours until we dig in! 🍽 I am totally in love with how this cake turned out and I'll be posting the video soon ✌🏼 (PS. If you've been watching my insta stories, you probably saw the trouble I was having with these macarons... after baking two semi-failed batches, I just decided to salvage a few of the best looking ones and use them πŸ˜†)

When your buttercream is full of air pockets and you can't get it smooth so you have to finish with a texture but it totally works πŸ‘ŒπŸΌ
I think these mint chip ice cream cookie cups are certainly worth turning on the oven for in July... especially because half of it doesn't even require an oven! #f52ovenlovin

I usually have a bajillion yolks left over after making buttercream, but I somehow found myself with 17 extra egg whites and had to find ways to use them before they went bad! Lots of egg white omelettes for breakfast + this two layer vanilla bean pavlova with lemon cream and fresh blackberries did the trick πŸ‘ŒπŸΌ
Things in the kitchen don’t always go as planned. I like to think of myself as being pretty experienced in cake-making, but I still learn something new from nearly every cake I make and occasionally encounter cake-tastrophes. Case in point - this cake. Social media is so often about portraying how perfect you are, but the reality is that everybody encounters obstacles, so today, I wanted to reveal a little behind the scenes story and share that nobody is as perfect as they may seem. - About 30 seconds after I stacked this cake, I noticed salted caramel and cinnamon buttercream filling slowly oozing out of the cake and onto the turntable below. Despite the buttercream dam that I had piped as I always do, the weight of two nine-inch cake layers was apparently just too much for the soft filling to handle. Twenty minutes in the freezer did nothing to ease the ooze and the filling escaped from the cake in earnest, getting all over the inside of my freezer. Forced to accept defeat, I took the cake out of the freezer and took it apart layer by layer, scraping all the buttercream and caramel mixture off of each one. I went to make new cinnamon buttercream, deciding that without the caramel, the buttercream on its own would be thick enough to hold the cake up. After several minutes of whipping yielded nothing more than meringue soup, however, I again had to accept that something had again gone very wrong. Some fat or grease must have found its way into my sugar syrup, preventing the egg whites from whipping up to peaks (which has seriously never happened to me before, but of course had to happen now πŸ™„). I started over, and this time successfully procured the lovely cinnamon buttercream filling I needed. I reassembled the cake, decorated it, and everything turned out just fine, even though it did take me all day instead of the few hours I had expected. And, as a bonus, I’m pretty sure the caramel flavor seeped into the cake layers as it oozed, meaning that both cinnamon and caramel could be tasted, just as planned! I'm just glad I was able to recover and pull this one off in the end; there have been times when I was not so fortunate πŸ™ˆπŸ˜†

For my first time ever making doughnuts, I'd say these were pretty darn good! They did come out a little denser than your average doughnuts, but hey, whatcha gonna do? πŸ€·πŸ»β€β™‚οΈ Still delicious!
